Last week I was introduced to No Calorie Noodles and it intrigued me, sometime that’s going to fill you up with no guilt? How is that even possible? They were kind enough so send over some packets for me to experiment with and today I’m sharing the first dish I prepared using the No Calorie Shirataki Noodles.

Shirataki Noodles are produced purely from the Japanese Konjac Root. This type of noodle is made solely from the soluble fibre of the plant – known as the glucomannan. You can read more about it over here.

Cajun Chicken with Zucchini Tomatoes and No Calorie Noodles

Ingredients:

  • 1 Onion, sliced
  • 6 Tomatoes, peeled and diced
  • 1 punnet of Zucchini’s chopped
  • 4 Chicken breasts
  • 1 packet No Calorie Fettuccine
  • 1 tsp Mixed Herbs
  • Cajun Spice
  • Salt & Pepper to taste

Method:

Fry the onion until brown in a small amount of oil with the herbs. Add the tomatoes and zucchini into the pot and let it cook until soft with the lid on. You can add salt and pepper to taste, I always add a bit of sugar replacement of chutney just to break the acidity of the tomatoes. While this is cooking you can spice the chicken breasts with the cajun spice. Grill to perfection in a griddle pain with a small amount of coconut oil. Warm the No Calorie Fettuccine and plate!

No Calorie Noodles are available in three varients from www.nocalnoodle.co.za and Dischem for R29. I have to be honest with you, the texture is a bit chewy but the taste worked really well with the sauce. Keep an eye out for a giveaway and more recipes. These noodles require some recipe experimentation!
