I know it’s been a long time since I posted a Foodie Friday recipe, my life has been chaotic and then being without internet for so long, I just couldn’t juggle everything but not to worry, today I’m back with a super easy recipes for chicken. This recipe is probably a favourite in a lot of South African homes and may vary slightly from home to home but it’s just too good not to share! Chutney & Mayo Chicken, yum!
Chutney & Mayo Chicken
- 8 – 1o Chicken Pieces, depending on how many mouths you are feeding
- Salt & Pepper to taste
- 1 Cup of Mayonnaise
- 1 Cup of Chutney, any kind
- 1 Packet of Brown Onion Soup
- 1 Cup of Boiling Water
Place the chicken pieces in an oven safe dish, sprinkle them with salt & pepper. In a mixing bowl mix together all the other ingredients. Pour over the chicken and bake at 180°C for 60 minutes, preheating the oven isn’t necessary.
This chicken dish can be served with anything from potatoes, mash, rice to couscous and is delicious with any kind of veggies.
A variation on this recipe that I sometimes like making is just before placing the chicken in the oven safe dish is to lightly press the skin sides in some cake flour and then placing tiny pieces of butter on each chicken piece, just be careful not to get any sauce on top when pouring it over, the chicken skins will bake nice and crispy.
