Hi loves, this is one of the yummiest dishes we have when the cooking bug eludes me and I don’t really feel like cooking up a storm. I won’t say is really fast to make but it’s super easy. The recipe makes 4 – 5 Tramezzinies, please note that you will need a sandwich press for this recipe.
- 4 Chicken Breasts
- Salt & Pepper to taste
- 1 Packet of Streaky Bacon
- Mayonnaise, about half a cup
- 1/2 a Teaspoon of Honey
- Mozzarella cheese, grated, you can use as much as you like, we usually grate a small block.
- Feta cheese
- Tramezzini Bread, you can purchase this nearly anywhere.
Add the chicken to a saucepan and just just cover with water, add salt and pepper to taste and boil until the chicken is cooked through. Let the chicken cool for a while, in the meantime add a little oil to an oven pan and place the bacon strip by strip, put this under the grill until the bacon starts to get crispy. Pull the chicken apart using a fork and knife, mix with mayonnaise and honey, using more or less mayonnaise is all up to you!
Slice your Tramezzini breads in open and place them open into your sandwich press just to toast the insides slightly. Next it’s time assemble your Tramezzini’s. Place the bottom halves on a plate or cutting board, divide the chicken up between the breads and spread it out on top. Next place 2 – 3 streaks of bacon, add cheese on top, use as much as your heart desires. Lastly crumble about 1/4 of a feta cheese wheel over, place the top slice and pop into your sandwich press. Wait until the Tramezinni is golden brown and the cheese melted, slice into quarters and serve with salad if you’d like. Enjoy!
