Foodie Friday | Mixed Berry Sponge Cake

On Wednesday the 8th of April my gran turned 89 years old. We treated her by taking her to Flava cafe for lunch and later that evening we had some friends over for cake, savory tart and milk tart.


Last year I made my gran a green fig cake, you can find the recipe here, she absolutely adores figs, I went to Woolworths to find the main ingredient for that cake but it was no where to be found so I made another cake with Berry Coulis from Woolworths SA, which was a huge success and I’m sharing the recipe with you!


  • 4 Eggs
  • 4 Teaspoons of Baking Powder
  • 1 & 1/4 Cups of Sugar
  • 200g Butter
  • 1 Packet of Berry Coulis, you can purchase this from Woolworths
  • About 150ml Milk
  • 1 & 3/4 Cups Cake Flour
  • 3 Table Spoons Corn Flour


Separate the eggs, whisk the egg whites until they form soft peaks, add 1 teaspoon of baking powder and the sugar, whisk well, add the egg yellows and whisk until everything is mixed well. Measure 115g of the mixed berry coulis, scoop into a jug that can go into the microwave, top it to 250ml with milk, add in the butter. Put in the microwave for 1 minute. Sift together the cake flour, 3 teaspoons of baking powder and the corn flour. You do not need to add any salt if you are using salted butter. Now, mix in the flour mix and milk mix to the eggs, a bit of each at a time until everything is well combined. Pour into 1 or 2 prepared cake tins and bake at 180°C (1 tin 50 – 55 minutes, 2 tins 35 – 40 minutes)

Let cake cool down.

Make frosting with the remainder of the coulis, butter and icing sugar. I did this by taking roughly 120g butter, beating it until soft, adding roughly 200g icing sugar (powdered sugar). Beat again. Add the remaining coulis, keep on beating, add another 200g icing sugar, if it’s a bit stiff add 5ml of milk at a time until you’ve reached the desired consistency, if it’s a little bit soft add some more icing sugar.

If you made a layered cake you can put the layers together with half of the frosting and then spread the rest of the frosting over the top, decorate as desired.
